Nutricious Ice-cream cake : Graham crackers and greek yogurt 



INGREDIENTS


Graham crackers : 40
plain Greek yogurt : 3 cups
Banana :1
Strawberries : 1/2 cup
Blueberries : 1/4 cup


METHOD

1. Coarsely grind or mash up strawberries, blueberries and banana

2. In a mixing bowl mix the mashed chunky fruits with greek yogurt.

3. In a freezer safe dish arrange graham crackers side by side like base.

4. Scoop out the yogurt and fruits mix and evenky spread 1 1/2 to  2 inch layer of this mix over the graham crackers base.

5. Top and cover with another graham cracker base. 

6. Place the dish in freezer for atleast 2 hours. Delicious dessert is ready.

Healthy , Nutritious and quick to make breakfast smootie

INGREDIENTS

 Bananas 2 numbers
Apple 1 number
Milk 11/2 cup
Chia seeds 1 teaspoon
Quick oats 1 cup
Honey 1 Tablespoon
water 1 cup

METHOD

1. Make oatmeal with quick oats and water in microwave. 
2. peel apples and deseed and chop .
3. In a blender add bananas,apple, chia seeds, milk ,oatmeal and honey
blend for 3-5 minutes

Ragi ( Finger Millet ) Pancakes


  • 1/2 cup ragi flour (finger millet flour)

  • 1/2 cup whole wheat flour

  • 1 large banana, mashed

  • 1 teaspoon baking powder

  • a pinch of salt

  • 1 large egg, whisked

  • oil

METHOD

  1. To begin making the Ragi Pancake Recipe, in a large mixing bowl, combine all the ingredients. The batter should be of pouring consistency but should not be watery or even too thick. 

  2. Heat a skillet greased with a little oil on medium heat. Once heated, pour a ladle or 1/4 cup of pancake batter on to the skillet. 

  3. Allow the pancake to cook on medium heat. You will notice the top side begins to get bubbles and air pockets and will slowly get steamed and cooked. At this point flip to the other side and allow it to cook for about 30 seconds.

  4. Flip again and serve hot with butter and maple syrup. Continue with the remaining batter and grease the skillet with oil after each batch if using a cast iron skillet.

  5. Serve Finger Millet Pancake Bananas along with some chopped nuts and maple syrup or honey for breakfast.  I have served with whippdd cream, maple syrup and blueberries.

Banana bread

Ingredients

Over ripe bananas 2
1/2 cup salted butter
1 cup white sugar
2 eggs
1 teaspoon maple syrup
1 1/2 cup all purpose flour
1 teaspoon baking soda
1/2 cup sour cream
1/2 cup  chopped walnuts

Directions

1. Preheat oven to 350 degrees F

Grease a 9x5 bread pan

2. In a large mixing bowl combine melted butter and sugar.


3. Add beaten eggs and maple syrup  and mix



4. Combine flour and baking soda .

5. Stir in butter mixture.

6. Finally , fold in sour cream , walnuts  and mashed bananas. 

7. Spread evenly in baking pan and bake in preheated oven at 350 degree F for 60 minutes .

Check if done by inserting  toothpick in center. 

8. Cool in pan for 10 minutes . Remove on wire rack and cool completely before serving.

Classic Sour Cream-Banana Bread : Quick bread


1/4
cup  butter, softened

1
cup  sugar

 Eggland's Best® eggs

1
cup  BREAKSTONE'S or KNUDSEN Sour Cream

1
cup  mashed fully ripe bananas (about 3)

2-1/4
cups  flour

1-1/2
tsp.  CALUMET Baking Powder

1/2
tsp.  baking soda

1/2
tsp.  salt

1
cup  chopped PLANTERS Walnuts

make it


HEAT oven to 350ºF.
BEAT butter and sugar in large bowl with mixer until blended. Add eggs and sour cream; mix well. Add bananas and combined dry ingredients; mix just until moistened. Stir in nuts.
POUR into greased and floured 9x5-inch loaf pan.
BAKE 1 hour or until toothpick inserted in center comes out clean. Cool 5 min.; remove from pan to wire rack. Cool completely before slicing. Refrigerate leftovers.

SPECIAL EXTRA
Mix 2 Tbsp. sugar and 1/4 tsp. ground cinnamon. Dust greased pan with half the sugar mixture. (No need to flour the greased pan.) Pour batter into pan, sprinkle with remaining sugar mixture and bake as directed.
