Brocolli and vegetables healthy Rice

Serves 5

INGREDIENTS 

Basmati Rice : 1 1/2 cup 
( I use Basmati for daily cooking, you can use any rice you use)

Fresh brocolli : 1 cup cut florets

Mix veggies ( corn,carrot,sweet peas ,green beans fine chopped ) : 1/2 cup 
I used frozen mix vegetables packet. 

Canola oil (or vegetable oil  or sunflower oil whatever u use for cooking) : 1/2 tablespoon 

Water : 3-4 cups 

Salt : 1/4 teaspoon 

METHOD 

1. Take rice in sauce pan. Wash rice thrice  and fill with 2 1/2 to 3 cups water . Leave on shelf for 15 minutes.  

2. Add washed mix vegetables and 1/4 teaspoon salt and oil to rice and cook on medium flame till rice is 80% done. 

3. Now poke brocolli florets on top of rice like planting tree (lol) and if u want it more soft add some more hot water from top. I like rice very non sticky and perfect.  Don't like soft rice. 

Cover lid and cook on lowest flame for 10 minutes.  


You have nutritious rice ready in minutes.

Khichda

What do u do with left overrice?

Here something tasty that my entire family enjoys. KHICHDA. You can make this with fresh rice as well.


INGREDIENTS 

Leftover cooked rice :  2 cups (or fresh rice)

Choice of beans and lentils soaked overnight in 2 cups water

In this picture post recipe I used 

Toor dal : 2 tablespoon 
Masoor dal:2 tablespoon 
Black beans kali mash : 2 tablespoon 
Red kidney beans rajma : 2 tablespoon 

Choice of vegetables 

I used 

Carrots : 2
Red salad radish : 5 numbers
Spinach frozen : 2 tablespoon 
Onion: 1 large
Tomatoes  : 2
Lemon juice : 1 teaspoon 


Masala 

Salt :1 teaspoon 
Turmeric powder :1/4 teaspoon 
Chilli powder : 3/4 teaspoon 
Coriander powder : 1/2 teaspoon 
Garam Masala powder : 1/4 teaspoon 
Ginger garlic paste : 2 teaspoon 
Tamarind pulp : 1/2 teaspoon 

Method 

As usual I m going to use pressure cooker  and make it in a jiffy . Lol.

1. Add all dals with one tablespoon oil and turmeric powder and pressure cook till done. 

2. Meanwhile  In a sauce pan saute onion in oil and when light brown add ginger garlic paste and fry 2 minutes more. 

3. In onionAdd salt,red chilli powder and  coriander powder and fry for 1 minute. 

4.  Open pressure cooker after letting pressure out on its own. Now add cooked rice (leftover or fresh) ,all vegetables , saute masala onions, tamarind pulp , lemon juice, Garam Masala powder everything to dals in cooker.

5. Cover add whistle  and cook for another 5 minutes.



All done!!  Enjoy with yogurt and favorite chiwda .

Thai Style Chicken Meatball Curry

My friend posted Thai style Chicken Meatballs curry on Facebook. Everybody was raving about it. She served it with Noodles. I thought of including it on my blog before i forget it. This recipe is something i want to save for life and keep cooking. Its very easy and quick recipe.



MEATBALLS:

Ingredients:

Ground chicken : 1lb
Two slices of white bread sides out.
Garlic paste 1/2 tablespoon
Ginger Paste : 1/2 Tablespoon
Black pepper  to taste.
salt to taste.

Method:
1.  Mix all ingredients well and let it sit for 2 hours.
2. In a pot boil 5 glasses of water.
3. Make small balls of ground meat mixture and drop in boiling water.
4. Let them boil in water for at least 10 minutes.

Tip: You can make extra meatballs when free and  preserve these meatballs in freezer and use them in gravy when in hurry  for quick dinner.


Curry:

Ingredients:

Oil: 2 tablespoon
4-5 curry leaves
One medium size onion diced.
crushed ginger 1/2 tablespoon
Green chillies 4
Crushed Garlic 3 cloves.
Paprika : few flakes
Turmeric powder :1/2 teaspoon
Black pepper powder : 1/2 teaspoon
Peanuts crushed 1 tablespoon
Coconut milk : 1 can

Method:

1. In a pot heat oil on medium flame.
2. add onion and fry till translucent. Do not let onions brown.
3. Add crushed ginger and garlic.Add crushed green chillies. Add crushed peanuts.
4. Add paprika,turmeric powder,black pepper powder and fry for 1 minute.
add meatballs and fry for 2-3 minutes.
5. Add coconut milk and simmer the flame and let till cook for 5 minutes.

Thai meatball curry is ready

Serving suggestion: Best with rice or noodles.

Garnishing suggestion: Diced onion and/or cilantro

Kushari Rice

Kushari Rice

..(famous egyptian dish.. u will find it in every arab house ) , my mom does it better than me!!!

Its an Egyptian dish containing rice, lentils, chickpeas, and macroni...

BUT

in my version i only used lentils..


First i boiled the lentils, but i didnt leave it much i dont want to be very very soft.. just medium soft!





then i fried the onions, around 7 pieces,



then in a big pan i fried another onion (chopped into small soft pieces) just one! along with 3 pieces of smashed garlic, and dill, then i added half table sppon cumin powder, 1 table spoon soft coriander, 1 table spoon black peper, 1 maggi cube, and finally teh salt.. MIX WELL!






tehn , add some hot boiled water on top, and leave to boil for 5 minuutes.



then i added half the amount of the fried onions not all of it,, cuz the rest will use it later...



and after 5 mintes , we add in the lentils, and mix it well..



again after 5 minuets of mixing, add in the rice, (i didnt explain the rice process, i thnk all of u know how to boil the rice,,!), then we mix the rice, very well with the rest, make sure water is covering around 1 cm.



first 10 minutes make the fire high.. until teh rice absorbs the water.. once that happens, then decrease the fire make it like medium to low heat... bring a small piece of butter and add it on top with out mixing and close the pan.. i want to melt by itself with the heat..s o it can give it a nice taste and smell...

+ add an aluminum on the pan and close it.. so it can cook.. like steam cook!



Finally serve it....

garnish it with teh rest of the ffried onions,, and some lemons..








* uSUALLY: we serve it with toppings such as tomato sauce,, or garlic...
