IRANI CHAI

IRANI CHAI : TEA THAT TASTES LIKE DESSERT



Have you ever had chai in Hyderabadi chai cafes? Its more like dessert. I m not a regular tea person like most people frommy place are. But when its comes to Hyderabadi Irani chai, i can drink two three cups. When i was in school i recreated it at home. And here is the recipe for everyone to relish

INGREDIENTS

FOR 2 CUPS

Tea powder : 1 teaspoon (i use yellow label (only!))
Lamsa chocolate flavor tea powder : 1/2 teaspoon
milk 2 cups
water 1 cup
Sugar 2 tsp(as per taste)
Cardamom : 1

METHOD

1. Bring water to boil in sauce pan.
2. Crush cardamom and add to boiling water and add sugar and boil for 3 minutes
3. Add both tea powders and boil another 3 minutes. (yes water reduces )
4. Now add milk and simmer and leave it till you get nice golden color tea . about 5 to 8 minutes.
5. Top it with thick fresh malai and enjoy!!!

Tips :

1. Adding 1 teaspoon condensed milk enhances flavor.
2. Using evaporated milk enhances taste too.

Mirchi Bajji and aloo bajji (chillies and potato snack)

Hi,

Most favorite snack from childhood memories is mirchi bajji. It reminds me of days spent in          Mysore at my Nanni's place (maternal grandmom) . Our Dassera vacation was most favorite time in Mysore with visits to exhibition, Mysore palace to see lighting, chamundi hills and KRS dam.

The favorite snack in exhibition was one big king size papad  and MIRCHI BAJJI.

Mirchi Bajji is big size chillies coated with gram flour batter and deep fried till crispy. Mouthwatering  snack especially for rainy days.


I have made some potato bajji for my little angel along with green mirchi bajji. We use Anaheim chillies as they are mild.


INGREDIENTS 


Anaheim  green chillies  :  8 numbers
Potato: 1 medium size
Besan , gram flour : 1/2 cup
Red Chilli powder : 1 teaspoon 
Turmeric powder : 1 / 2 teaspoon 
Salt: 3/4 teaspoon 
Baking soda : 1/4 teaspoon 
Ajwain , carrom seeds : 1/4 teaspoon 
Oil 1 cup for deep frying. 

Method 


1. Slit chillies from center to release heat. (I have cut chillies in halves coz my chillies are very long for my kadai)

2. Cut thin horizontal slices of potato .Use a slicer if u want.

3. Prepare batter by adding besan  (gram flour) in bowl, add red chiili powder , turmeric powder, salt,ajwain carrom seeds, baking soda and sift to break lumps and mix easily.

4. Add just enough water to make  batter consistency of pancake batter. Not too thin or thick.


TIP : 

If batter is too thin it will not coat chillies add little bean and mix again till it coats well and stays. And if batter is too thick add some water . 


5. Now dip chillies one by one in batter and deep fry till golden . 

6. Dip each potato slice in same batter and fry till golden 


Enjoy with tea in rain and snow!!

friends ur sillly friend sens makes tea also with perfect measurements-- one of my aunts used to say--"sahar chai bhi dawai jaisa banti hai--naap tol ker!!"..

Ingredients: [2cups]

tea powder-- right now using tata tea gold--(coz tata tea life was out of stock--this is best!)

okay

tea powder-- 2 tsp

sugar: 4tsp(teaspoon full)

milk--1.5 cup

water-- 1 cup..

malai--2 tsp

method:

* boil 1cup water in tea pan

* add 2 tsp tea leaves and 4 tsp sugar and boil

* add 1.5 cup milk & boil.

* after it bil..reduce flame to simmest & let it boil more till color gets perfect!!

* filter it in tea cup--add malai..

& relish tasty tea!!!
