Sheermal or Shirmal : Irani style nan

Sheermaal  : Irani style nan


Sheermal bread is very soft in texture and my favorite. We get this bread in Hyderabad commonly. It is Irani style bread with aroma of saffron and butter. I have made a healthier version by adding some whole wheat flour.  I have used my bread machine on dough setting. You can also make this using food processor or just your hands for mixing. 

INGREDIENTS

Egg : 1
Milk : 1 cup warm
Butter : 1/2 cup
sugar : 2  tablespoon
salt : 1/4 teaspoon
Yeast : 1 1/4 teaspoon
All purpose flour : 2 cups
Whole wheat flour : 1.5 cup
sesame seeds : 2 tablespoon
egg yolk : 1


METHOD using bread machine

1.  Add all wet ingredients first in bread machine. Egg, 1 cup warm milk, 1/2 cup melted butter.

2. Now add all purpose flour and whole wheat flour and salt and sugar and yeast. 

3. Use dough setting and turn on bread machine. My machine takes 1.5 hours for well risen perfect dough. 


METHOD without bread machine

1. Mix yeast and sugar and add 1/4 cup warm water. Set aside for 15 minutes till bubbles form. This is to activate yeast. 

2. Beat egg and add milk to it. Now add the above mixture and mix again. add salt.

3. Slowly add flour 1/4 cup at a time and keep kneading. Make a soft dough.

4. Cover the dough with plastic wrap and set aside in warm place to rise.

1. Make big balls and roll out in circular shape . My three year old has rolled my bread and hence slightly shapeless but good enough for 3 year old kid. 

2. Brush each bread with egg yolk and sprinkle sesame seeds. 

My dough made 6 sheermals

3. Bake in preheated oven at 350 degree F for 25 to 30 minutes or till golden brown. 

4. Serve hot and fresh with rich gravy. I served with Paya soup. For recipe of paya soup please search my blog .

WHOLE WHEAT TANDOORI NAAN

WHOLE WHEAT TANDOORI NAAN
WITH BREAD MACHINE AND WITHOUT USING BREAD MACHINE.



INGREDIENTS

Whole wheat flour 2 cups

Yogurt 2 tablespoon

warm water 1/2 cup

dry yeast   1 teaspoon

sugar 1 teaspoon

salt 1 teaspoon

Melted butter 1 tablespoon

sesame seeds 1 teaspoon



METHOD

1. IN 1/2 cup warm water add yeast and sugar and set aside for 10 minutes.

2. If you are using bread machine , add above mixture and remaining ingredients except sesame seeds and set on dough cycle. My bread machine took 1.5 hours to make this dough. 

Alternatiely you will have knead the dough with hands and set aside covered with damp cloth for an hour and again punch and knead and set aside for half anhour till dougb rises. 





3. Once dough is ready make small balls and use rolling pin to roll in oblong shape.

4. sprinkle sesame seeds and roll rolling pin over nAAN once. 

5. Arrange on greased baking sheet . Bake in preheated oven at 350 degrees for 3 to 5 minutes or till done. 

6. Brush with butter and serve with favorite curry. I have served with aloo Palak.

WHOLE WHEAT NAAN


WHOLE WHEAT NAAN
USING BREAD MACHINE 
AND ALSO TIPS TO MAKE WITHOUT BREAD MACHINE



INGREDIENTS
  • 2 cups whole wheat flour/atta
  • 1 tsp salt
  • 2 tbsp melted ghee or oil
  • 2 tbsp curd/yogurt
  • 1 tsp dry yeast
  • 1 tsp sugar
  • ½ cup warm water
  • 2 tsp white sesame seeds
  • some butter or ghee for applying on the naan
how to make the recipe:
  1. mix warm water, sugar and yeast in a small bowl.
  2. cover and keep in a warm place for 10 minutes or so till the mixture rises.
  3. I used bread machine and hence added the above mixture to bread maker and remaining ingredients except sesame seeds and butter. 
  4. Keep on dough setting and prepare the dough. My bread machine took 1.5 hours to do this. 
  5. ((Alternatiely if you dont have bread  machine at home sift flour and salt together.
  6. add curd, ghee and yeast mixture.
  7. mix and then knead into a smooth and elastic dough.
  8. apply oil or ghee to all the sides of the dough
  9. keep the dough in a large bowl covered with a lid in a warm place for 1.5 or 2 hours or more till the dough rises and doubles in size.
  10. punch the dough and then knead for 5 minutes.))

  1. divide into medium sized balls and keep aside.
  2. roll each ball into a 6-7 inch circles and pull from one side to give oblong shape.
  3. sprinkle sesame seeds on top.
  4. roll over the rolling pin so that the seeds get embedded in the naan.


  1. bake the whole wheat naan on a greased tray in a preheated oven for 360 F for 3-4 minutes or more till you see golden spots on the naan.
  2. remove and apply some ghee or butter on top of the naan.
  3. serve the whole wheat naan hot with any  curry dish. I served with Aloo palak .
