HIGH PROTIEN SOYA CHUNK PULAO
Soya chunks called soya wadi are easily available in Indian stores for very cheap. These chunks are high protein chunks. They have more protein than eggs and meats and chicken and fish. These were introduced to me by my husband who is from Maharashtra. However i had never seen or heard of them in Bangalore.
Taste of soya wadi really appleaed to me. Its almost like eating lamb. soft and light chewy.
INGREDIENTS
Soya wadi : 2 cups
Basmati Rice : 2 cups
Potatoes : 2
Baby Carrots : 1/2 cup
Tomatoes : 3-4
Frozen mixed vegetables : 1/2 cup.
(I have mentioned the veggies that i used in this particular recipe .. usually i use whatever are at home. You can use your choice veggies)
onion : 1
Canola oil : 1/4 cup
cardamom : 3-4 pods
Cinnamon stick : 1/4 inch
cloves: 3
Cumin seeds zeera : 1 teaspoon
Ginger and garlic paste : 2 tablespoon
lime juice : 2 tablespoon
Kasuri Methi : 1 teaspoon
salt :1 teaspoon
Turmeric powder : 1/2 teaspoon
Red chilli powder : 1 teaspoon
Coriander powder : 1/4 teaspoon
Garam Masala : 1/4 teaspoon
Ingredients i have not used coz of personal dislike .. which u can add
Mint leaves : 1 tablespoon
Green chillies: 3-4
PREPARATION:
1. Boil soya wadi chunks as per package instructions and set aside.
2. peel potatoes and cut each potato in 4 medium pieces.
3. peel baby carrots
4. chop tomatoes
5. Chop onion.
6. Wash and soak rice for 20 minutes.
METHOD
1. Heat oil in pan. Add cardamom, cinnamon, cloves and Zeera cumin seeds and fry 2 minutes.
2. Now add onions and FRY onion till golden brown . Add ginger garlic paste and fry 2 mins.
3. Add all vegetables and fry for 5 minutes.
4. Add all spices and fry for 3 minutes more and stir.
5. Add soaked rice and lime juice and 3 cups water. Add boiled soya chunks over rice.
Cook till done.
