Khichda

What do u do with left overrice?

Here something tasty that my entire family enjoys. KHICHDA. You can make this with fresh rice as well.


INGREDIENTS 

Leftover cooked rice :  2 cups (or fresh rice)

Choice of beans and lentils soaked overnight in 2 cups water

In this picture post recipe I used 

Toor dal : 2 tablespoon 
Masoor dal:2 tablespoon 
Black beans kali mash : 2 tablespoon 
Red kidney beans rajma : 2 tablespoon 

Choice of vegetables 

I used 

Carrots : 2
Red salad radish : 5 numbers
Spinach frozen : 2 tablespoon 
Onion: 1 large
Tomatoes  : 2
Lemon juice : 1 teaspoon 


Masala 

Salt :1 teaspoon 
Turmeric powder :1/4 teaspoon 
Chilli powder : 3/4 teaspoon 
Coriander powder : 1/2 teaspoon 
Garam Masala powder : 1/4 teaspoon 
Ginger garlic paste : 2 teaspoon 
Tamarind pulp : 1/2 teaspoon 

Method 

As usual I m going to use pressure cooker  and make it in a jiffy . Lol.

1. Add all dals with one tablespoon oil and turmeric powder and pressure cook till done. 

2. Meanwhile  In a sauce pan saute onion in oil and when light brown add ginger garlic paste and fry 2 minutes more. 

3. In onionAdd salt,red chilli powder and  coriander powder and fry for 1 minute. 

4.  Open pressure cooker after letting pressure out on its own. Now add cooked rice (leftover or fresh) ,all vegetables , saute masala onions, tamarind pulp , lemon juice, Garam Masala powder everything to dals in cooker.

5. Cover add whistle  and cook for another 5 minutes.



All done!!  Enjoy with yogurt and favorite chiwda .
