Homemade Jalebi

HOMEMADE JALEBI RECIPE






The Homemade Jalebi Recipe is a delicious mithai dish that you can make right in your own kitchen.  This homemade Jalebi recipe is actually very easy to prepare and tastes absolutely delicious. 


Ingredients

  • 1 cup maida or all-purpose flour

  • 2 tablespoon corn flour

  • 3/4 cup sour yogurt

  • 1/2 teaspoon baking powder

  • 2 tablespoon ghee

  • a pinch of turmeric powder for colour

  • 2 tablespoons oil, plus more oil for deep frying

  • Ingredients for the sugar syrup
  • 1 cup sugar

  • 1 cup water

 strands of saffron



To make the sugar syrup, boil the sugar with water and saffron powder in a small bowl on medium heat until the sugar dissolves. When the sugar becomes thick and stringy of one string consistency.Turn off the heat and keep aside.

Directions forJalebi 

BATTER:

  1. To begin making the Jalebi, we will first begin the preparation by mixing the maida, corn flour, baking soda, ghee and turmeric powder in a medium bowl.  Combine all the dry ingredients well, until well combined.

  2. Add yogurt to the dry ingredients and blend them all together to make a thick batter by adding very little water. The consistency of the batter should be thick and not watery, similar to the butter cream batter. You should be able to make a shape when piped in a piping bag.

  3. When done, cover the jalebi batter and place it in a warm place for 24 hours or overnight, till it is fermented (the batter will rise on fermentation). Once the batter is fermented stir the batter in a cut and fold motion to combine it once again.

  4. Dont over stir you want the air pockets in the batter to remain. This will help in the jalebi being crisp and also in turn help it absorb the sugar syrup.

FRYING:

  1. to make the jalebis, preheat the oil for deep frying. Once the oil is hot enough, you will know this, when you add a drop of batter in and it will come rising to the top almost immediately.

  2. Once you have filled the piping bag, pipe spirals of the batter onto the medium hot oil, until you get atleast 3 concentric circles. Fry the jalebi on medium heat until golden brown in colour and crisp. Once the jalebi is crisp and browned, drain the exess oil out and immediately dip the jalebi's into the hot sugar syrup.

  3. Piping the jalebis into the medium hot oil takes a little experience, the more you pipe the more practice you will get and the better you get at it. 


Soak jalebi in sugar syrup. Jalebis should rest in the sugar syrup for at least a minute, after which they can be drained out of the excess syrup and then served.

Healthy Spinach Cake : POPEYE CAKE :


HEALTHY SPINACH BANANA CAKE AND MUFFINS.


I call it Popeye cake. Full of healthy spinach. Easiest and yummiest way to make your cribby eater eat spinach. I m also using 50% whole wheat flour for added good health. 






Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ cup canola oil
  • ¾ cup milk
  • 1 (6 ounce) bag fresh baby spinach
  • ½ cup mashed banana (from about 1 to 2 bananas)
  • 1/2 cup chopped pecans

Instructions
  1. Preheat oven to 350°F and line two 12-cup muffin pans with paper liners.
  2. Whisk together dry ingredients in a large bowl: flours, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a blender, place oil, milk, and spinach. Blend on high for about 30 seconds or until completely puréed. Add banana ; blend on low just to mix.
  4. Pour puréed mixture into dry mixture and fold together with a rubber spatula until completely combined.
  5. Fill muffin cups about ⅔ full and bake 18-20 minutes or until a toothpick inserted into the center comes out clean.


I have filled a cake pan as well.

Add chopped pecans  on top.

Hyderabadi Kaddu ka Dalcha : lauki dal



Kaddu here doesnt mean pumpkin. In Hyderabad and Bangalore Bottle gaurd commonly known as LAUKI all over India in hindi is called as KADDU. 

Hence it is actually LAUKI KA DALCHA. 

It is very simple mouth watering extremely tasty curry. Suits well with plain rice, zeera rice or it is commonly made along side biryani as well. 

INGREDIENTS

  • 1 cup soaked toovar dal(yellow lentils) or chana dal(bengal gram). Chana dal is preferred as it adds a different kind of buttery flavor.

  • 1 tsp turmeric powder
  • 2 tomatoes finely chopped
  • water 2 cups

  • 1 tbsp oil
  • 1 cinnamon stick
  • ½ tsp shahi zeera seeds(caraway seeds)
  • 3-4 curry leaves
  • 2-3 slit green chillies
  • 1 small size bottle gourd/Lauki (cut into long pieces)
  • 2 medium sized onions, finely sliced
  • 2-3 tomatoes, finely chopped
  • 1 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1 cup water
  • salt -to taste

  • 1 small lemon sized tamarind, extracted pulp
  • 2 tsp coriander leaves finely chopped for garnishing
  • 1 tsp garam masala powder(powder of dalchini, elaichi, cloves, shahjeera)
  • 5-6 curry leaves while boiling

INSTRUCTIONS
Cook dal first 


  1. In a pressure cooker, add chana dal, add turmeric powder, add tomatoes, add water and pressure cook until the dal is tenderized.
  2. Cook it for about 10 minutes or 5-6 whistles.
  3. Reduce the steam of the cooker, mash the dal by adding salt, add tamarind pulp, mix well, check if salt is required and keep aside.

For Cooking Bottle Gourd/Lauki:
  1. In a pressure cooker, heat oil, add cinnamon stick, add caraway seeds, add curry leaves, add slit green chillies, add the chopped tomatoes, add the onion slices and saute for a while.
  2. Add bottle gourd(lauki) slices, add ginger garlic paste, add turmeric powder, add pinch of red chilli powder, mix well, add water, add salt as per taste and pressure cook for about 3 whistles for the lauki to get soft.
  3. Lastly Combine everything that is the dal with tamarind pulp and the cooked Kaddu curry all together.
  4. To it add garam masala powder, curry leaves, coriander leaves, add some sugar to kill the sour taste(optional).
  5. Bring the whole mixture to a boil on sim flame.
  6. Garnish with coriander leaves.

100% whole wheat bread using Bread machine





I got this new bread machine which is a boon. i get to make fresh home made bread for my family everyday. This bread maker is my newest most favorite gadget.  My family gets fresh ,healthy, no preservatives bread. 

There are many recipes online for bread made of all-purpose flour and 50% or less whole wheat. But none for 100%. I did trial and error and made my own 100% whole grain recipe. This is no fail formula. And bread is extremely soft and very tasty.


INGREDIENTS



Milk : 11/2 cups
(you can use milk and water 50-50 or only water. But milk is magic ingredient here to make your bread tasty and soft)
Egg 1
Honey : 1/4 cup
sugar 2 tablespoons
salt 11/2  teaspoon
Oil : 2 tablespoon


Whole wheat flour : 31/2 cups
yeast : 21/4 teaspoon
METHOD


1. In your bread pan start adding all ingredients exactly in order that they mentioned in list. This order is very important else bread will not mix well. 

2. Choose 2 pounds loaf setting

3. Choose whole grain dough setting.

Turn on your bread maker.

Easy as ABC. 

My bread-maker  makes my bread ready in 3 hours. 


High protien Soya Chunk Pulao

HIGH PROTIEN SOYA CHUNK PULAO 

Soya chunks called soya wadi are easily available in Indian stores for very cheap. These chunks are high protein chunks. They have more protein than eggs and meats and chicken and fish. These were introduced to me by my husband who is from Maharashtra. However i had never seen or heard of them in Bangalore. 

Taste of soya wadi really appleaed to me. Its almost like eating lamb. soft and light chewy. 

INGREDIENTS

Soya wadi : 2 cups
Basmati Rice : 2 cups
Potatoes : 2 
Baby Carrots : 1/2 cup
Tomatoes : 3-4
Frozen mixed vegetables : 1/2 cup. 
(I have mentioned the veggies that i used in this particular recipe .. usually i use whatever are at home. You can use your choice veggies)
onion : 1

Canola oil : 1/4 cup

cardamom : 3-4 pods
Cinnamon stick : 1/4 inch
cloves: 3
Cumin seeds zeera : 1 teaspoon

Ginger and garlic paste : 2 tablespoon
lime juice : 2 tablespoon
Kasuri Methi : 1 teaspoon

salt :1 teaspoon
Turmeric powder : 1/2 teaspoon
Red chilli powder : 1 teaspoon
Coriander powder : 1/4 teaspoon
Garam Masala : 1/4 teaspoon

Ingredients i have not used coz of personal dislike .. which u can add

Mint leaves : 1 tablespoon
Green chillies: 3-4




PREPARATION:

1. Boil soya wadi chunks as per package instructions and set aside. 
2. peel potatoes and cut each potato in 4 medium pieces.
3. peel baby carrots
4. chop tomatoes
5. Chop onion.
6. Wash and soak rice for 20 minutes. 


METHOD

1. Heat oil in pan. Add cardamom, cinnamon, cloves and Zeera cumin seeds and fry 2 minutes.

2. Now add onions and  FRY onion till golden brown . Add ginger garlic paste and fry 2 mins. 

3. Add all vegetables and fry for 5 minutes.


4. Add all spices and fry for 3 minutes more and stir. 

5. Add soaked rice and lime juice and 3 cups water. Add boiled soya chunks over rice. 
Cook till done.

Shrimp Pasta

FISH KABOB : Apetizer : Fish Patties


These yummy fish Kabobs are perfect as party apetizers. They are soft yet crispy. I HAVE USED FLOUNDER FISH AS ITS SOFT AND PERFECT FOR THESE KABOBS. Here is step by step recipe. 

INGREDIENTS

FISH : 1pound
Potatoes : 3 medium
salt 1 teaspoon
Turmeric powder:1/2teaspoon
red Chilli powder : 1/2teaspoon
Garam Masala powder : 1/2teaspoon
Methi fenugreek powder : 1/4 teaspoon
ginger powder 1/4 teaspoon
Garlic powder 1/4 teaspoon
lemon juice 2 teaspoon
corn starch or corn flour : 2 tablespoon
milk : 1/4 cup
vegetable oil or canola oil to shallow fry. 


PREPARATION

1. Boil potatoes in water with some salt. peel and mash well. Set aside. 

2. Boil flounder fillets in 1 cup water with some salt , one pinch turmeric powder, one pinch chilli powder. Stir and break and mash fish as it boils. After flounder is boiled make sure that all water is used up and its not watery. Add some water if its too dry or drain water by cooking on high if its too fluidy.

METHOD

1. In a bowl take boiled fish and boiled potatoes.


2. Add all powder spices masalas and lemon juice and knead well like dough and mix.
3. Add corn starch in milk and mix well toform soft milky fluid . Add this mix to fish dough and knead again.


4. Make patties in hand.


5. Shallow fry till golden brown.

I had visited Hyderabad to my aunt's house . She had a very kind elderly lady for help . This lady made triangle parathas for breakfast and i loved it . I asked her to teach me how she made it. And here is how to make these yummy parathas.


Make dough same way as you make roti dough with whole wheat flour.


You can use oil or desi ghee clarified butter to make this. 



Make a ball of roti dough
Roll out small circlular roti
Apply oil and fold in half
Apply oil again and fold in half to make a triangle
roll out
Roast on pan or tawa or skillet

Apply oil and flip
 Roast till perfect.
Hi, Thank you . Actually salmon is dry and hard fish and i like it grilled. This is first time i made these fish kabobs and invented this recipe out of need. I tried frying flounder and it broke as its soft. I felt bad to throw it and created this recipe. I think you can try it Salmon if u want to, but make sure u boil till its really soft and try using more potato and more cornstarch for better binding .
