Thai Style Chicken Meatball Curry

My friend posted Thai style Chicken Meatballs curry on Facebook. Everybody was raving about it. She served it with Noodles. I thought of including it on my blog before i forget it. This recipe is something i want to save for life and keep cooking. Its very easy and quick recipe.



MEATBALLS:

Ingredients:

Ground chicken : 1lb
Two slices of white bread sides out.
Garlic paste 1/2 tablespoon
Ginger Paste : 1/2 Tablespoon
Black pepper  to taste.
salt to taste.

Method:
1.  Mix all ingredients well and let it sit for 2 hours.
2. In a pot boil 5 glasses of water.
3. Make small balls of ground meat mixture and drop in boiling water.
4. Let them boil in water for at least 10 minutes.

Tip: You can make extra meatballs when free and  preserve these meatballs in freezer and use them in gravy when in hurry  for quick dinner.


Curry:

Ingredients:

Oil: 2 tablespoon
4-5 curry leaves
One medium size onion diced.
crushed ginger 1/2 tablespoon
Green chillies 4
Crushed Garlic 3 cloves.
Paprika : few flakes
Turmeric powder :1/2 teaspoon
Black pepper powder : 1/2 teaspoon
Peanuts crushed 1 tablespoon
Coconut milk : 1 can

Method:

1. In a pot heat oil on medium flame.
2. add onion and fry till translucent. Do not let onions brown.
3. Add crushed ginger and garlic.Add crushed green chillies. Add crushed peanuts.
4. Add paprika,turmeric powder,black pepper powder and fry for 1 minute.
add meatballs and fry for 2-3 minutes.
5. Add coconut milk and simmer the flame and let till cook for 5 minutes.

Thai meatball curry is ready

Serving suggestion: Best with rice or noodles.

Garnishing suggestion: Diced onion and/or cilantro
