Whole wheat Bombay pav

Pav is small loaf of bread resembling a bun. Bombay pav is usually made of all purpose  flour. Here is healthy way of making whole wheat pav. This pav is used in Indian street food chat Pata spicy snacks like pav bhaji  and vada pav and missel pav and more.

Ingredients

1 cup all purpose flour
1 pack of active dry yeast (about one teaspoon )
3 to 4 cups whole wheat flour
2 tablespoons of vegetable or canola oil
2 tablespoon butter
2 table spoon milk
1 egg
2 tablespoon yogurt
2 teaspoon sugar
1 teaspoon salt
1 cup warm water

1cup is 250ml

Method

1. Take 1 cup all purpose flour , yeast,salt and sugar in a bowl (6 cup size bowl). Add  one cup warm water (room temperature water microwaved for 40 sec) whist to make smooth lump free batter. Cover and leave it aside for 1 hour.

After 1 hour it should look frothy and bubbly and risen.

2. Add melted butter, yogurt and beaten egg  to above mix and keep adding whole wheat flour one cup at a time and knead the dough with your hands

Tip
If dough appears sticky add extra wheat flour to adjust. If it appears dry add some water or milk.

Knead to smooth pliable dough . Once you finish add oil and knead again.

3. Cover the bowl with lid or moist kitchen cotton napkin. Leave it aside for 1 hour. If you using instant fresh yeast 30 minutes is enough. I have used active dry yeast hence I left it aside for 1 hour or more.

Dough rises and doubles in size after one hour. Gently punch and deflate it.

4. Form a log of dough and slice into equal 12 to 15 pieces. Take each piece in Palm one by one and roll into ball in smooth round shape.

5. Make all rolls in same way and arrange in a greased and dusted baking tray with 1 inch distance between each ball. Cover with plastic wrap or moist kitchen cotton napkin  and leave it aside for one hour.

6. After one hour the balls rise double in size. Gently press the top of balls to flatten them. Remove plastic wrap cover .

7. Preheat oven to 400 F and brush the pavs with milk  to give it shiny look (I have not brushed the pav with milk in my picture ). Keep the baking tray in center rack. Bake for 10 to 15 minutes.

8. Remove the baking tray and cool on wire rack.brush pav with melted butter. Serve with hot pav bhaji or vada.

Enjoy healthy whole wheat pavs.
